Eggplants
Did you know that there are many different kinds of eggplants? There are the traditional purple Italian eggplants that we see in farmers markets and grocery stores.
But there are pink, pink and white striped, white, Asian long white, purple, and even green eggplants. See photo above.
My favorite is the small round Rosso di Napoli eggplants, which I grow from my saved seeds in my garden. See photo to the left.
This is a mediterranean variety that ripens from green to a deep red orange.
There are quite a few venders at The Ithaca Farmers Market that have eggplants. You'll have to shop around for the ones that appeal to you.
There is also an array of Summer onions, hot peppers, and different colored and flavored tomatoes.
Make your eggplant spread mix and roast away.
